Low-fat milk follows a different pattern. In 1970, low-fat milk started at much lower consumption level, at approximately 6 gallons per capita, then it rose significantly to about 14 gallons – equal to that of whole-milk in 1990 and maintained stable until 2010 before decreasing slightly to under 15 gallons in 2015.
