Looking from an overall perspective, the consumption of whole milk decreased significantly after 1970, and the consumption of low-fat milk, in contrast, increased and remained stable until 2010.
The chart demonstrates that in 1970 whole milk was a popular food item and used in an amount of 25 gallons a year. However, the popularity started to decline dramatically. In 1980 the consumption comprised 20 gallons a year, 10 gallons in 2000, and the lowest point was observed in 2015, at approximately 5 gallons.
As for low-fat milk, its consumption increased up to 2010, despite its initial unpopularity with consumers, at approximately 6 gallons in 1970. The consumption rose sharply in 1990 to almost 15 gallons and was stable. However, it started to decrease marginally after 2010, from 14 gallons to nearly 13 gallons in 2015.
