Mooncakes through the long course of Vietnamese history have played a really important role in Vietnamese traditional culture. The diagram below illustrates the information about the commercial manufacturing process of mooncakes.
Overview, the process looks really simple and just needs to follow 6 main steps: blending, portioning, enclosing, stamping, dual baking, packaging. But is it just simple like that, let’s find out.
First of all, the first step you need to do is preparation. The ingredients of a traditional mooncake is not too hard to find, but when blending and mixing it up it would bring a really impressive favour. For the preparation you would need to prepare some ingredients like: flour, sauces, sugar, eggs,… Then knead the dough ingredients and after that paste fillings mixed in vats. Following that automated precise cake weighing and diving into uniform balls. For the enclosing part the mooncakes are pasted filing wrapped then enclosed inside dough casing.
Secondly are these final processes to bake mooncakes – stamping – a ball of dough is pressed in mechanical molds by traditional pattern imprinted. Then initially bake in a tunnel oven and finish with egg glaze applied & final bake. The cake after that just needs cooling conveyor belt & QC and nitrogen sealing ten delivered to the user.
