The map and the chart depict the global willingness to eat insect based products and the current price for certain food available on the market place.
Looking at the map, Mexico is the country with the highest percentage of willingness. Thailand and Perù are in the second place with a percentage of 58 and 56% respectively. Further these countries, also Brazil and China have a percentage that exceed that of unwillingness, in fact they are signed of colour yellow.
However, there are other countries where insects are considered a meal. In particular, in the south of Africa, UK,USA, Australia,India, Spain, and in Russia, we can find a willingness between 30 and 40% to eat insect products. Finally, Japan has the lowest percentage, in fact it results of red colour.
In reference to this, in the other chart there is a list of insect products and their relative prices on the market place. Food like Weaver Ant, Bamboo Caterpillar, and Palm Weevil are considered like the most expensive, especially the weaver ant that costs 10,65 dollars per kg. While giant water bug, house cricket, giant water bug, and field cricket are the cheapest insect products. Despite this, all insect based products are more expensive than traditional food, like rice, glutinous rice, chicken, and pork.
