Overall, this process involves three main stages beginning with the deactivation and drying, followed by either aging or fermentation, and lastly storage in the case of pu-erh raw tea and compression in the case of pu-erh ripe tea.
In order to produce raw or ripe tea, leaves are first fried to inactivate the enzymes in it. The fried leaves are then rolled to be left lying under the sun for the purpose of drying. After that, loose tea is formed to be either compressed or fermented.
Following step involves loose raw tea undergoes compression, becoming pu-erh raw tea or undergoes fermentation by mold, forming loose ripe tea. And in the final step, pu-erh raw tea is aged with the help of storing, comprising vintage pu-erh raw tea. Or to create pu-erh ripe tea, loose ripe tea must be compressed.
