The process starts with air blowing towards a lid, when it is open air can enter under the ground level, reaching the bottom of the smokery. Air can be directed into a fire by the corner of the home smokery which is the lowest point of smokery.
It is clearly seen that directed air blows into the fire and logs are staked above each other in the top of the bonfire. In addition, a lid is closed above logs at ground level. Then smoke of the burnt logs go through the pipe. Smoke gets into a box through bricks, where fishes and turkeys are hung in the top of box above ground level.
