In general, the process is divided into 2 main phases, in which phase 1 takes place underground and phase 2 occurs above the ground level.
The first step of the process is to open the lid and let the fresh air on the ground flow into the chamber. The air then passes along the pipe to another chamber, which also has a lid to allow logs to be loaded in. After that, the logs, along with the help of the air, burn into a fire to create smoke.
The smoke then runs into a pipe leading to the third chamber, and from that to a closed box above the ground level, where food such as fish and meat is stored. The food is soon to be smoked to preserve and serve meals by the heat created in the process.
