Firstly, ripped olives are harvested by farmers using rake. These fruits will be stored in a vat for 2 to 3 days before being transported to a chain of specific systems. At this machine, olives are rinsed under cold water, then smashed into small pieces by hammers before being divided into 2 different products.

A part of the olive results from the crushing machine become olive stones contained in containers, meanwhile, another one called olive paste flows in a tube to a pressing and filtering system. After being pressed hydraulically then filtered to be oil, this mixture will be combined with water in a centrifuge before being extracted into bottles and transported to shops as completed olive oil.
