Firstly,the fish is caught with fish nets from the ocean.After that it is loaded to the boat to be delivered to the port.Then they are put into special fridge to be frozen and preserve freshness in relevant temperature.Later,they are soaked in salt water mixed with yellow coloring.Following this,they are smoked to have flavor and preservation.After this they are cut open to remove an internal parts and being cleaned with the help of fresh water.
