The process consists of eight main steps, starting with harvesting the olives and concluding with delivery to the shops.
Initially, the olives are gathered by raking them from the trees and then stored in a large vat for 2 to 3 days. Following this, they undergo a cleaning process using cool water to eliminate soil and dirt. Subsequently, the olives are placed on a conveyor belt to be crushed into olive paste by three hammers, with the stones being separated and transferred to a container.
The fifth step involves pressing and sorting. During this stage, the olive paste is transported through a lengthy pipe before reaching a specialized machine that is utilized to extract the oil. The oil is then filtered to remove impurities. Once the sorting is finished, the resulting oil is directed into a centrifuge, where it is spun at a sufficient speed to separate into water and oil before being transferred into bottles. The process concludes with the transportation of these oil bottles to shops via trucks, where they are then sold and consumed.
