Overall, the entire process contains three main stages, starting with the air penetration, followed by burning logs to generate smokes, which are used to heat food.
The smokery consists of a lid, a central fire sector containing stacked logs, and a smokery box with a top lid. These design are connected by a pipe. Initially, the air penetrates into the smokery due to the opening of a lid. These air follow the pipe to access the fire sector, which use logs to ignite and maintain fire. The fire chamber is covered by a lid placed above the surface, preventing the smokes go outside
In the next stage, the smokes created by the fire go through a pipe to smoke and heat the food that are hanged by a box. Before smoking the foods, the smokes have to cross over the bricks in order to disperse and circulate around the foods.
