During coagulation, fermenting microorganisms and an enzyme known as rennet are added to separate the curds from the whey.
Next, the curds are cut into smaller pieces and cooked while stirring constantly. Once cooked, the whey is drained, and the curds are transferred to the milling station. At this station, the curds are salted to develop the typical flavor.
To form cheese, the salted curd mixture is poured into molds and pressed to shape it. The cheese wheels are then placed on shelves to ripen. Once ripened, the cheese is ready to be sliced and served with your favorite dishes.
