In general, it is noticeable that the process includes three main stages from environmental air to smoke for meat. Moreover, almost all steps would do under ground level.
At the first stage in the process, it can be seen that air is gone into the home smokery when the lid is opened. Amount of air is travelled to burn out logs in next stage. In this case the second lid is closed to prevent smoke from giving away.
Turning to the third stage how to produce smoked foods from meat, the smoke is gone through a pipe which relates to a box and heated up bricks to cook meat in hot air. Another striking point is that the box contained meat is constructed not only under the ground level but also on the ground level.
