noteworthy, the different methods of production begins and ends similar. the first step is when only top fresh tea leaves are been picked, it is provided for good quality. after that leaves are exposed withering on rack, as a result they lost 60% of their moisture. the following steps have differences. the processes ends with drying, in oven, which lead to freeing 97% moisture and releasing flavour and aroma.
diversity in producing starts after step of withering. traditional procedure to begin with rolling, leaves rolled flat and broken. as this happening enzymes releases from leaves. in the stage that follows fermentation which is leaded to rolled it spread on cement, which is turn to the last familiar step. modern method of obtaining tea back, after loosing moisture, leaves are being cut, torn and curled. as the same time it is quick process and smaller granular pieces created.
