Overall, this is a largely mechanical process comprising 5 main stages, almost each of which requires a specific temperature in order to thicken the initial mixture.
Initially, water and milk are mixed in a container, before the produced mixture is colled at 5 degrees for 2 hours. Once the liquid has been cooled, salt is added in order to give an additional taste to the product. After that, the mixture undergoes a fermentation stage for 6 hours at 37 degress and gets significantly thicker.
Subsequently, the future soft cheese is evaporated at 100 degrees for 8 hours. In the final stage, after becoming noticeably thick, cheese is filtered from the excess water, which is drained through the pipe. Following this, the final product is then cooled in the cold tank for 8 hours at 5 degrees to get rid of excess temperature.
