The diagram demonstrates the process of producing soft cheese. Generally speaking, there are five distinct stages in this linear process, beginning with mixing of ingredients and in the final cooling the soft cheese with waste water. It is also mentioning that the process requires specialized equipment and some external influence.
In the initial stage, water and milk are mixed together. Following this, the mixture goes a cooling process, where it mixes 2 hours at a 9°C temperature. Next, salt added to the mixture and it goes to formentation. During fermentation, the mixture is heated 37°C for 6 hours.
In the forth stage, the mixture placed to evaporation phase, here it heated at 100° for 8 hours. Then, the mixture is filtered to go to the cooling. In the final stage, the mixture transferred to a large cooling, where it is maintained at 5°C temperature for 8 hours, until it is ready
