Overall, the production of soft cheese involves seven main stage, this process starting with mixed of milk, water followed by cooling, fermentation evaporation and filtering. The process ends with separation of waste water.
At the beginning of the process, water and milk are mixed together to liquid to thick mixture. This mixture cooling during 2 hour to 5 degrees and maintained for hours prepare for the fermentation stage. In the next stage salt is added to the cooled mixture and then heated to 37 degrees. This fermentation process take place over a period 6 hour, this mixture to begin thicken. Once fermentation after finishing, the substance undergoes evaporation, heated to 100 degrees for 8 hours. This helps to reduce the humidity.
After this stage, this mixture transferred to the next stage, it is cooled here and it is allowed to rest for a while. After that this mixture filtered through filter, then it is placed in finished bottles or packages. In the final stage, finished products shipped to costumers.
