The line chart illustrates data about how the expenditure on three spreads (margarine, low fat and reduced spreads, and butter) changed over a 26-year period, starting from 1981. Overall, it can be seen that the consumption of margarine and low fat and reduced spreads (LF-RS) both declined over the period shown and finished in the first and second positions in reverse, respectively. Looking at the chart in more detail, it is evident that the consumption of butter rose significantly from around 143 grams in 1981 to about 157 grams in 1986. After that, butter expenditure experienced a downward trend for the rest of the period, starting from exactly 100 grams in 1991 and decreasing to roughly 50 grams in 2007. Turning to the remaining data sets, it can be seen that margarine witnessed a fluctuation from around 90 grams to 100 grams between 1981 and 1991 and remained consistent until 1996. Next, it decreased continuously over the period shown and hit the lowest point among all three categories in 2007, which was 40 grams. Finally, LF-RS consumption experienced rapid growth from about 10 grams in 1996 to roughly 85 grams in 2001. Then, it gradually shrank until 2007 to about 70 grams, which was the highest point on the chart.
