Overall, it is observed that two different ways of producing black tea, Which are traditional and modern methods. The initial stages are different but the final stages are similar.
To begin with, Traditional method starts with picking up the fresh leaves manually from the tea tree. Moreover, the bud and top two leaves will be picked. Whereas, The modern method is quite opposite to traditional method because, here the leaves are taken by a process called ‘Withering’, In this process the air will pass through leaves on a rack so that 60 per cent of the moisture will be passed away and the leaves will be collected by a tea bag.
However, The next process is little bit similar because both the leaves are placed on rollers but, The difference is that in traditional way the leaves will be rolled and flat to release the enzymes. Whereas, In modern the leaves are cut,torn and curled into granular pieces.The final few stages are common to each other with oxidation and fermentation. Here, the leaves are kept on tiles/cement were it changes to copper colour and the last stage is firing/drying, Which is done with the help of hot air dryers so that three per cent of the moisture will be present and the final flavour and aroma will be passed further.
