The diagram illustrates the smoking procedure for family purposes. In general, this process consists of 4 fundamental stages, beginning with cultivating fresh air and ending with smoking food.
In the beginning of the procedure, a lid is opened to collect natural wind, which is then traveled through a L – shape tunnel. In the subsequent step, the air contacts with fire beneath logs of wood, which is transformed to the fuels to perpetuate the flame. In the following stage, those logs are continuously burned in order to generate the requested smoke.
In the final step, that essential smoke is guided by another tunnel to a special box, which is located on the ground and completely sealed so that it can minimize the entrance of air molecules. Notably, the food, which is previously hung in the top of the box, is slowly cooked by the smoke, making them have the smoky flavor and reduce all their moisture inside their meat.
