Overall,it is clear that, this process consist of 9 different stages. The first includes from collecting pods to roasting, and the second requires from removing outer shell to molding.
First of all, in tge first stage, the process is started riping red pods from the cacao tree. The pods are harvested. After that, they are fertilization, and it take about between 2 to 10 days. Then fertilized beans are spreat under the sun. To the end of the fieat stage bears under in the sun are roasted under 120-150°C.
On the other hand, outer shell removed from the beans. At this moment, the cleaned beans are crushed. It demands process of conching. In this process the product’s inner part is pressed in order to dilute this beans. After all, ready diluted product’s tempered and finally, it is molded.
