The graph demonstrates trends in the consumption of products made from milk over the period of 40 years (from 1970 to 2010) in the USA. The measurements were made in pounds per person.
Overall, the popularity of cheese was rising gradually during the whole time. In contrast, the consumption of full-fat ice cream was slowly decreasing. The expenditure of low-fat ice cream, on the other hand, remained almost still. In terms of yogurt, its consumption increased significantly.
The use of cheese started at roughly 7 pounds in 1970 and was rising steadily until the end of the period. It became the most spread dairy product by 2010. Meanwhile, the consumption of full-fat ice cream started out as the highest among 4, but was gradually falling with some fluctuation until 2010, when it reached its minimum of around 8 pounds. Nevertheless, low-fat ice cream was at 4 pounds in the beginning, and, despite being inconsistent throughout the period, remained almost the same by the end. Conversely, the expenditure of yogurt started at slightly more than 0 pounds, but was rising rapidly up until 2010, when it reached its peak of 9 pounds.
