Overall, the consumption of cheese and yogurt showed an increase over the given period. On the contrary, full-fat ice cream fell slightly and low-fat ice cream stayed the same.
Cheese and yogurt showed a consistent uptrend throughout the given period. The consumption of cheese at the start was around 8 pounds per person. This figure rose sharply to approximately 25 pounds of cheese consumed per person at the end of the period. Yogurt started with one-eight of cheese consumption at only 1 pound per person. Then, it climbed gradually to roughly 4 pounds per person consumed in 2000, before sharply increasing to 9 pounds per person.
On the other hand, full-fat ice cream was the most popular dairy product at the beginning of the period, consumed at around 12 pounds per person. Full-fat ice cream decreased consistently to roughly 8 pounds per person of consumption by the end. This decline caused cheese to overtake in 1977. Meanwhile, low-fat ice cream did not experience a significant change during the period showing a steady trend.
